Salmon & Broccoli Sauce

(Serves 2)

Ingredients

6 oz brocolli florets

1/2 pint milk (skimmed, 1% or 2%)

1 tbsp cornflour

7 oz flaked tin salmon 

Topping: 

2 tbsp parmesan cheese

Freshly ground pepper 

Directions 

  • Cook broccoli and drain.
  • Mix milk and corn flower together, and heat in microwave until thickened.
  • Stir in broccoli and salmon.
  • Top with parmesan cheese and black pepper and serve.
 

*This recipe is light on carbs.  If you need more carbohydrates and want to increase the number of calories in this recipe, add a large sweet potato.  This will add an additional 30+ grams of carbs, and about 140 calories.
