High Protein Rice & Chicken Recipe
Spicy Chicken & Rice
(Serves 2)
Ingredients
2 tsp sunflower oil
2 chicken breasts
6 oz brown rice
1 onion, chopped
2 cloves garlic, crushed
1 - 2 tsp curry powder
1 tbsp tomato puree
3 tbsp water
Directions
- Cook chicken and boil rice
- Meanwhile, heat oil in a large pan and cook onion for 5 minutes until golden.
- Add garlic and curry powder and cook for 2 additional minutes.
- Cut chicken into chunks and add to a pan with tomato puree and water.
- Cut Chicken into chunks and add to pan with tomato puree and water.
- Cover and cook for 5-10 more minutes.
- Serve with Rice and green vegetables.
