Chicken with Peas and Apricots

(Serves 2)

Ingredients

1 tsp oil

1 onion

1 piece fresh root ginger (finely chopped)

2 Chicken brests, cut into large pieces

2 cloves garlic

3 oz dried apricots

1/4 pint water

14 oz tin chick peas  

Directions 

  • Heat oil in pan.
  • stir fry onion, garlic, ginger and chicken for 4 min.
  • Add apricots, water and chick peas.
  • Simmer for 15 min.
  • Server with brown rice and green vegetables.

I assume that your main goal is to learn how to build muscle fast and not how to get skinny fast, but many of you are actually encouraging weight loss as opposed to weight gain.  Fortunately it's simple, and you don't need a physical therapy assistant in order to pack on some pounds, as it's quite simple.
