Chicken with Peas and Apricots
(Serves 2)
Ingredients
1 tsp oil
1 onion
1 piece fresh root ginger (finely chopped)
2 Chicken brests, cut into large pieces
2 cloves garlic
3 oz dried apricots
1/4 pint water
14 oz tin chick peas
Directions
- Heat oil in pan.
- stir fry onion, garlic, ginger and chicken for 4 min.
- Add apricots, water and chick peas.
- Simmer for 15 min.
- Server with brown rice and green vegetables.
